FIELD: dairy industry.

SUBSTANCE: method for producing a sweetened dairy product is implemented in the following way. A milk composition including lactose is provided. Enzyme is added, and at least partial lactose hydrolysis is carried out. Lactic acid bacteria are inoculated, and the milk composition is fermented. The composition is separated by ultrafiltration or divided by centrifugation to obtain a filtered fermented milk composition and a byproduct – sour whey. An intermediate composition is added, including at least one steviol glycoside and at least one additive. The sweetened dairy product contains the filtered fermented milk composition and the intermediate composition mixed or arranged in the form of layers or discrete inclusions.

EFFECT: invention provides for a method allowing for obtaining a product with improved taste, improved profile similar to sugar, almost without artificial aftertaste, with the exclusion of steviol glycoside removal at the separation stage.
