SUBSTANCE: invention relates to beverages comprising an aroma and sweet modulating compound. For making a concentrated solution (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one or a salt or solvate thereof is added to an aqueous solution: food grade polymer that is soluble in water at or above 0.1 % by weight at 20 °C to the aqueous solution, a sweetening agent and (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one. Concentration of the above compound or a salt or solvate thereof is greater than or equal to 1 ppm, by weight of the total weight of the solution, at 3 °C, wherein the pH is less than or equal to 4 or it is greater than or equal to 7 ppm, by weight of the total weight of the solution, at 25 °C, wherein the pH is less than or equal to 4. As an option for making a concentrated solution (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one or a salt or solvate thereof, the sweetening agent and acid are added to water to form a syrup. Said mentioned compound or a salt or solvate thereof is added to the syrup to form a supersaturated solution of said compound or a salt or solvate thereof. Food grade polymer soluble in water at or above 0.1 % by weight at 20 °C or more is added to any of said steps to form a concentrated solution. Concentration of (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one or a salt or solvate thereof in a solution containing an food polymer, is greater than 1 ppm, by weight of the total weight of the solution, after 12 weeks at 3 °C, at pH, less than or equal to 4, or greater than 7 ppm after 12 weeks at 20 °C, at pH, less than or equal to 4. Invention relates to an aqueous solution comprising (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one or a salt or solvate thereof, a food grade polymer soluble in water at or above 0.1 % by weight or more at 20 °C, sweetening agent. Concentration of said compound in the solution is 1 ppm or more, by weight of the total weight of the solution, at 3 °C, wherein the pH is less than or equal to 4 or it is greater than or equal to 7 ppm, by weight of the total weight of the solution, at 25 °C, wherein the pH is less than or equal to 4. Invention relates to a method of making a beverage and to a beverage, wherein the method comprising diluting said concentrated solutions in an aqueous solution. Concentration of (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one by the total weight of the beverage is less than about 0.2–6 ppm.
EFFECT: invention provides the increased solubility and stabilized supersaturated state of (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutane-1-one in high concentration at low pH.
