FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used during jam preparation. Method of jam preparation includes the preparation of vegetable components, the preparation of sugar syrup, pouring them with sugar syrup, cooking and packing. At the same time, 10 minutes before the final cooking of jam, Siberian fir extract is added to the syrup in a ratio of 0.1–5.0 % by weight of the syrup.
EFFECT: invention makes it possible to obtain coniferous aroma and flavor jam based on Siberian fir extract, enriched with biologically active substances.
