FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to a technology for production of meat-and-vegetable based semi-products. Method of production of meat-and-vegetable cutlets involves chopping meat, onion, fresh, fresh potatoes on the top of the chopstick, crushing with simultaneous introduction of melange, drinking water, CO2-extract of black pepper fragrant, salt, oil and greens, with addition of zucchini mince, Manchurian walnut kernel, rosemary and linseed oil CO2-extract, molding, breading of finished products in breadcrumbs and canning. In the breadcrumbs flour wheat germ "Vitazar" is added in the ratio of 1:1, and the packaging of a finished product is carried out chilled in a vacuum. Quantitative ratios of ingredients in the product are selected.
EFFECT: increase in the energy and nutritional value of meat-and-vegetable cutlets, as well as improvement in consistency due to increase in the moisture-binding capacity of raw meat.
