FIELD: food industry.
SUBSTANCE: disclosed is a method for producing a frozen semi-finished product in the form of a cutlet, involving mincing solid components in the form of ostrich meat, chicken meat, fresh peeled garlic, fresh peeled bulb onions with the addition of edible salt with simultaneous introduction of liquid components in form of melange, drinking water, pomegranate juice, CO2 extract of ginger, portioning and moulding the obtained mass in the form of cutlets, their mealing in breadcrumbs and preservation by freezing at a temperature of -36 °C for 30 minutes to produce desired product, with following ratio of initial components, wt.%: ostrich meat 53.0; chicken meat 20.0; peeled fresh bulb onions 4.0; fresh peeled garlic 0.9; CO2-extract of ginger 0.01; melange 5.0; breadcrumbs 4.0; pomegranate juice 7.0; edible salt 2.00; drinking water 4.09.
EFFECT: invention ensures manufacture of a product with increased nutritive value and improved organoleptic indices as well as extends the range of similar products.
