FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used as a composition for the preparation of fillings in the manufacture of confectionery. Proposed composition of the filling for confectionery, including roasted grated nuts, natural honey, amendment agent, a filler, which as a amendment contains a mixture of fibregum and coconut flour, taken in a 1:5 ratio, as nuts contains cashews, and as a filler contains pureed dried dates and mashed boiled beets with a solids content of 68–75 %, in the following ratio of initial components in the mixture, wt.%: cashews 38–50; natural honey 6–10; a mixture of fibregum and coconut flour 8–12; dried dates 22–28; mashed boiled beet 10–15.
EFFECT: invention is aimed at improving the organoleptic and structural-mechanical parameters, improving the nutritional value of the product, reducing sugar capacity.
