FIELD: food industry; fat-and-oil industry.
SUBSTANCE: invention relates to the oil and food industry. Method of obtaining flour from oilseed cake includes preliminary grinding of cake, additional grinding of previously ground cake, sieving grinding on sieves. Flax cake is used as a cake with a mass fraction of oil of 7–11 % for absolutely dry matter and soybean cake with a mass fraction of oil of 5.0–9.0 % for absolutely dry substance, which after additional grinding are mixed at the following ratios, wt. %: flax cake – 5–23, soybean cake – 77–95, the mixture is ground, the resulting grinding is sieved on sieves with openings of 250, 450, 710 microns, and the descent from the 450 microns and 710 microns screens is subjected to additional grinding.
EFFECT: invention makes it possible to increase the lysine content in the flour proteins made of the cake, to bring the ratio of fatty acids ω-6:ω-3 to values from 3:1 to 5:1, as well as to increase the oxidative stability of the oil in the meal cake, therefore, and shelf life thereof, heat resistance of flour in the production of functional foods.
