FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Preliminarily, a grinding mixture is made from prepared wheat grain and flax seeds. The finished mixture is crushed on roller machines with a ribbed back along the back (bc/bc) at a speed of rotation of a fast roller from 4.0 to 8.0 m/s, with a ratio of the circular speeds of fast- and slow-rotating rollers from 1.5 to 3.5, with a cutting density of rollers from 4 to 6 pieces per 1 cm, with a groove slope from 4.5 to 7.5%, followed by sorting the grinding product on sieves of various sizes.
EFFECT: invention allows developing an effective technology for processing wheat grain and flax seeds to obtain wheat-flax flour with a high protein and fat content for bakery and confectionery industries.
