FIELD: food industry.
SUBSTANCE: method for production of flour relates to grinding of grain mixture for production of food flour and may be used in food industry for production of flour with high content of protein and fat. Method consists in that a grinding mixture of oat grain and linseed is taken in ratio of 9:1–8:2. Finished mixture is milled on roller machines with location of back flanges on tip. Rapid rotation speed of the fast roller is 4.0–8.0 m/s. Ratio of circular speeds of fast- and slow-rotating rollers ranges from 1.5 to 3.5. Density of cutting of rollers ranges from 4 to 8 pieces per 1 cm with slope of rift of 4.5–10 %. Product of grinding is sorted on sieve of various size.
EFFECT: method allows to expand raw material base for confectionary and bakery industry.
