FIELD: food industry.
SUBSTANCE: invention is related to production of food triticale-hemp-linen flour. A grinding mixture is prepared in advance from prepared triticale grains, hemp seeds and flax seeds in a ratio of 9.2:0.4:0.4. Before grinding the finished triticale-hemp-linen grinding mixture, the triticale grain is subjected in advance to hydrothermal treatment by the method of cold conditioning, moistening to a moisture content of 14-15% and softening for 8-10 hours. The grinding mixture is made up of hydrothermally treated triticale grains in the amount of 92%, hemp seeds in the amount of 4% and flax seeds in the amount of 4%. The finished grinding mixture is ground on roller machines with placement of corrugations tip-to-tip, with a speed of rotation of the fast roller 6.0 m/s, with a ratio of circular speeds of fast and slow rotating rollers of 2.5, with a density of cutting rollers of 9 pieces per 1 cm, with an angle of corrugation tips of 10%. Next, the grinding product is sorted on sieves of various sizes.
EFFECT: invention makes it possible to obtain flour with a high content of fat and protein, as well as to expand the range of flour-based food products by using processed triticale-hemp-linen grain mixture in baking and confectionery industries.
