SUBSTANCE: invention relates to food industry and may be used in production of combined culinary products from meat raw materials and by-products. Method envisages mince preparation by way of mixing of two prepared components: raw minced meat and mince from boiled by-products. Second component of the culinary product is boiled in water for 1 hour with addition of black pepper, bay leaf, bulb onions that promotes removal of an unpleasant smell, then it is milled. Ingredients for culinary product are mixed, product is formed in form of round cutlets. Obtained product is fried on a frying surface without oil or vegetable or animal oil or on a grid or net on an open flame. Quantitative ratio of primary components is selected.

EFFECT: enriching meat mince with nutrients, obtaining a product of high nutritional and biological value of functional purpose, having good organoleptic properties.
