FIELD: food industry.
SUBSTANCE: invention relates to alcohol-free and food-concentrates branches of food industry, namely to production of alcohol-free collagen-containing beverages of functional purpose. Method includes mixing decoction with sea-buckthorn pulp with addition of stevia leaves with fish collagen dispersion, or mixing decoction with girasol pulp with addition of stevia leaves, lemon juice with fish collagen dispersion, or mixing infusion of dried chicory root powder with addition of stevia and orange juice with dispersion of fish collagen into it, mixture cooling to 4 °C, packing and storage. Alcohol-free collagen-containing beverages are prepared at the following weight ratio of components: fish collagen dispersion – 100 g; broth with pulp of sea-buckthorn – 600 g; stevia leaves – 10 g, or fish collagen dispersion – 100 g; decoction with girasol pulp – 600 g; stevia leaves – 4 g; lemon juice – 50 g, or fish collagen dispersion – 100 g; infusion of dried chicory root powder – 600 g; stevia leaves – 4 g; orange juice – 50 g. Invention allows to expand the range of functional purpose beverages using fish raw material, produce a beverage with high organoleptic indices preserved for a long period of time, high nutritive and biological value and reduced contamination.
EFFECT: use of liquid collagen substance as base of beverages when enriching with vegetal sources, biologically active substances imparts wound-healing effect on gastrointestinal mucosa.
