FIELD: meat industry.
SUBSTANCE: invention relates to meat industry, in particular, to production of dry food additive composition for production of meat products, for example meat or meat pasta pies, liver sausages and mince preserves. Food additive composition is based on dry defatted milk, mono- and diglycerides of fatty acids, wheat fiber, modified starch, culinary food salt, paprika, micro- and nano-encapsulated extracts of ginger and black pepper. Quantitative ratio of ingredients in composition is selected.
EFFECT: food additive composition is introduced in amount of 3–10 kg per 100 kg of raw material in order to provide for regulation of structural and rheological properties of meat and meat-and-vegetable systems, as well as organoleptic properties and consistence of the ready product.
