FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to preparation of soup pureed beef liver at public catering enterprises, and can be used in gluten-free, dietary alimentation. Method for production of beef liver puree includes preparation of recipe components, cutting, blanching and chopping parsley roots, frying the prepared beef liver with carrots and bulb onions until half-ready, stewing them until ready, chopping liver with vegetables, blending the strained liver with prepared rooster roots, polysaccharide, in which water is added in amount of 3–5 % of the total weight of water, with required amount of water, salt, bringing to boiling point and adding liaison.
EFFECT: creation of a low-calorie product with high antioxidant properties, as well as high content of food fibers.
