FIELD: food industry.
SUBSTANCE: performing mechanical and two-stage thermal treatment of lupine grain. Second stage of heat treatment is carried out at temperature 140÷180 °C in presence of acute steam at excess pressure of 5÷15 atm with duration of treatment in pressure chamber 20÷180 s with subsequent removal of moisture up to 4–14 %. Grits are milled, cooled and sorted to particle size of 1.5÷4.0 mm.
EFFECT: invention provides maximum reduction of the amount of alkaloids included in lupine seeds to a level acceptable for human consumption, while maintaining acceptable organoleptic properties (taste, colour, odour) and simultaneous increase in the ready product efficiency compared to traditionally used ingredients, for example, soya.
