SUBSTANCE: invention relates to the food industry. Disclosed is a method of producing thiamine-containing ice cream. In the process of production, nanostructured thiamine is introduced into the obtained product in sodium alginate or carrageenan in amount of 3 g of the nanostructured additive per 1,000 g of the ready ice cream.

EFFECT: invention allows to produce ice-cream with organoleptic characteristics characteristic for its variety enriched with nanostructured thiamine.
