SUBSTANCE: invention relates to biotechnology of food products and may be used for collection, filling and storage of fruits, in particular, invention relates to an iodine composition for high-quality color reactions to determine residual content of starch in vegetables and fruits. For this purpose, the composition contains elementary iodine, potassium iodide, ethyl and/or isopropyl alcohol and/or glycerine or any mixture thereof, polyethylene oxide of molecular weight 400–40,000 and sodium and/or potassium sulphate with weight ratio of components iodine : potassium iodide : ethyl and/or isopropyl alcohols and/or glycerine : polyethylene oxide : sodium and/or potassium sulphate equal to 1:0.2–10:2–25:0.0005–0.05:0.005–0.05.

EFFECT: invention provides creation of a stable iodine solution – concentrate and/or final working solution, effective for detection of various concentrations of residual starch in products, which can preserve its properties for a long period of time under normal conditions at room temperature.
