FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to cooking and bakery industry, and may be used for production of products from edible products in the form of plate (tableware) when arranging meals at food stations. Disclosed is edible disposable dish made of dough by way of its baking in molds with subsequent cooling and drying, at that the dough production composition contains wheat flour, wheat offal, beetroot powder and water at following ratio of initial components, wt.%: wheat bran – 30–35; wheat flour – 20–26; beet food fiber 4–6; water – balance. Composition additionally includes salt and sugar sand in amount of 1 to 2 % of each component. Water used is water passed through filter for magnetic-track processing based on reverse osmosis. Baking in molds is performed at temperature 200 °C.
EFFECT: invention is aimed at enhancement of organoleptic characteristics of edible ware with improved physical and mechanical properties sufficient for its usage as a disposable dishware.
