FIELD: food industry.

SUBSTANCE: invention relates to the food industry. Composition of liquid beverage concentrate, including liquid beverage concentrate, including acidifier, flavoring agent, high-intensity sweetener, soluble fiber, preserving agent and water, wherein the soluble fiber is about 20–60 wt% of the entire concentrate with a pH in the range of about 1.2 to about 4.0. Soluble fiber is selected from maize fiber, polydextrose and combinations thereof; and preserving agent is approximately 0.01–0.3 wt% beverage concentrate. Concentrate has viscosity between approximately 25 and 70 cP (Brookfield viscosity (spindle LV2, at 30 rpm at 25 °C)). Composition of liquid beverage concentrate, including liquid beverage concentrate, including acidifier, flavoring agent, high-intensity sweetener, soluble fiber, preserving agent and water, wherein the soluble fiber is about 20–60 wt% of the entire concentrate with pH in the range of about 1.2–6.5. Soluble fiber is selected from maize fiber, polydextrose and combinations thereof; and preserving agent is polysorbate and ranges from approximately 0.01 to about 0.3 wt% of beverage concentrate. Concentrate has viscosity between approximately 25 and 70 cP (Brookfield viscosity (spindle LV2, at 30 rpm at 25 °C)). Method for production of a beverage containing soluble fibers includes the following stages: (a) production of the beverage concentrate described above and its mixing with water till the volume in the range of approximately 177.4 ml (6 ounces) – approximately 591.4 ml (20 ounces).

EFFECT: invention enables to obtain a product containing a large amount of food fibers, having a lower viscosity, more stable during storage.
