FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method for preparation and sterilization or pasteurisation of a food product placed in a sealed package containing a single-way valve opening at pressure drop of 20 to 200 mbar, the method comprising the following stages: a) heating sealed package for food product preparation to temperature of 50–110 °C; b) acting on sealed package from step a) with pressure below atmospheric pressure such that gas released during preparation of product and oxygen are removed from sealed package through said valve; and c) sterilization or pasteurisation is carried out by autoclaving the sealed package at pressure above atmospheric pressure and at temperature higher than 100 °C.
EFFECT: invention allows to eliminate organoleptic odours during simultaneous preparation and pasteurisation or sterilization of the product.
