FIELD: food industry.
SUBSTANCE: described is a method for boiling a food product in a sealed package comprising a one-way valve which opens at overpressure of 20–200 mbar, including heating of sealed package in furnace at approximately atmospheric pressure for first period of time and after first period of time, package exposure to pressure below atmospheric pressure, so that gas leaves tight package through valve.
EFFECT: method and furnace for vacuum cooking are disclosed.
