FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used for preparation of brown tea drinks with high antioxidant and consumer properties. Disclosed is a method for producing a frozen semi-product of fruit and berry raw material for preparing fruit tea, comprising collecting fruits and berries in a removable maturity stage, followed by washing and inspection to remove impurities, as well as fruits and berries of inadequate quality, in which a mixture of fresh fruit-and-berry components is mixed and milled in a bowl with volume of 0.5 l in a blender with engine power of 700 W and a speed mode of 15,000 rpm, which ensures uniform grinding until homogeneous state with size particles 0.3–0.5 mm, further dispensing into silicone molds for freezing with size of width, depth and height of cell – 3 cm, after which freezing in shock freezing cabinet, pre-set to temperature mode, equal to 0 °C and subsequent abrupt temperature drop to -41 °C for 10 minutes, at air flow rate in chamber equal to 35 m/s, which will allow to reduce product temperature from 20 °C at first stage of process, with subsequent reduction of temperature inside product to -18 °C and subsequent storage at -18 °C. Also disclosed are frozen semi-finished products of fruit-and-berry raw material for preparation of fruit tea, obtained by said method, in which fresh berries of sea buckthorn are used as fruit-and-berry components, as well as fresh orange and lemon fruits in following ratio of initial components, wt%: fresh sea buckthorns berries – 65.0; fresh orange 25.0; fresh lemon 10.0, or fresh berries are represented by fresh cranberries and fresh orange, lemon and black chokeberry fruits, with the following ratio of initial components, wt%: fresh orange 35.0; fresh cranberry berries– 30.0; fresh lemon 15.0; fresh black chokeberry fruits – 20.0, or fresh berries of cherries, raspberries, blackberries and blueberries are used as fruit-and-berry components, with the following ratio of initial components, wt%: fresh cherry berries – 35.0; fresh raspberry berries 35.0; fresh blackberry berries 15.0; blueberries fresh 15.0, or fresh berries of currants, fresh fruits chokeberry are used as fruit-berry components at the following ratio of initial components, wt%: fresh currant berries – 90.0; black chokeberry 10.0, or fresh cherry berries are used as fruit-and-berry components, as well as fresh lemon and chokeberry at the following initial components ratio, wt%: fresh cherry berries – 50.0; fresh chokeberry fruits 35.0; fresh lemon 15.0.
EFFECT: invention allows to produce a frozen fruit-and-berry semi-product for alcohol-free beverages preparation with increased consumer, organoleptic and antioxidant properties, as well as reduce preparation time and expand range of tea beverages produced at catering enterprises.
