SUBSTANCE: invention relates to biotechnology and is a method of identifying a compound which modulates activity of a polypeptide comprising a GPR120 cat, which comprises an amino acid sequence given in SEQ ID NO: 1, or a functional fragment thereof, wherein the method involves: bringing the polypeptide into contact with a compound; measuring the biological activity of the polypeptide in the absence and presence of the compound and identifying the compound as a compound which modulates the biological activity of the polypeptide, in the case when there is a difference in biological activity in the absence of the compound and in the presence of the compound.
EFFECT: invention allows to modulate food products flavor.
