FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to soup concentrates in the form of powders or briquettes for preparation of dishes in domestic conditions, which can be used as dietary preventive nutrition. Soup concentrate for dietary preventive nutrition contains celery, parsley, onion, turmeric, carrots, paprika extract, iodised salt, yeast extract, dry soya sauce, hawthorn extract, dihydroquercetin and vitamin C with the following initial components content, wt%: celery – 3.56–7.56; parsley – 3.56–7.56; onions – 3.67–9.67; tumeric – 2.33–4.33; carrots – 40.00–60.00; pepper extract – 0.01–0.10; edible iodized salt – 15.67–31.67; yeast extract – 0.40–2.40; dry soya sauce – 0.22–4.22; hawthorn extract – 0.11–0.44; dihydroquercetin – 0.01–0.22; vitamin C – 0.11–0.44.
EFFECT: soup concentrate possesses high organoleptic indices, has preventive effect on organs of cardiovascular and digestive systems, including heart and liver.
