FIELD: food concentrates production.
SUBSTANCE: invention relates to the production of food concentrates for the first instant lunch dishes. An instant soup food concentrate is proposed, containing common and iodized salt, granulated sugar, monosodium glutamate, carrot powder, onion powder, carrot cubes, garlic granules, red paprika slices, garlic powder, ground parsley root, dried onion slices, dried root parsley pieces, dried green paprika cubes, parsnip pieces, tomato slices, parsley leaves, dried dill, crushed black pepper with the following content of initial components, wt.%: table salt 20.18-50.18; iodized salt 10.76-25.76; granulated sugar 5.87-20.87; monosodium glutamate 1.55-9.55; carrot powder 0.51-4.51; onion powder 0.51-4.51; carrots in cubes 0.51-4.51; garlic granules 0.51-4.51; red paprika in pieces 0.51-4.51; garlic powder 0.51-4.51; ground parsley root 0.51-4.51; dried onion slices 0.51-4.51; dried parsley root in pieces 0.51-4.51; dried green paprika in cubes 0.51-4.51; parsnips in pieces 0.51-4.51; tomato slices 0.1-1; parsley leaves 0.1-1; dried dill 0.1-1; crushed black pepper 0.1-1. At the same time, carrots are contained in cubes of 5×5 mm, dried green paprika - in cubes of 3×3 mm, garlic granules and red paprika are contained in pieces of 2-4 mm, tomato - in pieces of 3-4 mm.
EFFECT: invention is aimed at obtaining a food concentrate with high organoleptic characteristics, on the basis of which a broth with high organoleptic characteristics is obtained, as well as at expanding the range of instant food concentrates.
