FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to food products preparation means. Cooking-aid for long-term storage for coating and frying a food product into one action in a frying pan or a heated surface comprises 2–28 wt. % of oil, 20–60 wt. % of water, 2.3–5.5 wt. % modified starch, 3–15 wt. % salt, 0.5–30 wt. % sugar and 0.5–30 wt. % flavouring additives, and wherein the cooking agent has viscosity ranges from 8 to 60 Pa·s at shear rate of 1 s-1 at 25 °C, and oil and water are in form of an emulsion. Additional aspects of the invention include a method for preparation of said cooking-aid, as well as a method for coating and frying a food product in a heated frying pan or on a heated surface.
EFFECT: proposed cooking-aid of long-term storage for coating and frying of food product simplifies the process of food product preparation, does not require additional use of oil; the product is not sprayed during preparation and forms a uniform coating on the food product.
