FIELD: food industry.
SUBSTANCE: invention is related to technology of food industry. Disclosed is a fish-and-vegetal product containing prepared milled components – fish, carrots, bulb onions, tomato paste, vegetable oil, salt, Peasant (Krestyanskoe) sweet-cream unsalted butter 72.5 % fat content, Poltava No. 3 wheat groats, vegetable marrows, spicy-and-smoking hydrophobic CO2-extract flavoring agent, CO2-extract of allspice and CO2-extract of nutmeg, with following ratio of initial components, wt%: fish 33.0; Poltava No. 3 wheat groats 16.0; carrots 12.5; bulb onions 12.0; vegetable marrows 11.5; Peasant (Krestyanskoe) sweet-cream unsalted butter 72.5 % 7.5; tomato paste in conversion to 70 % of dry substances content of 3.3; spicy-and-smoking hydrophobic CO2-extract 0.09; CO2-extract of allspice 0.06; CO2-extract of nutmeg 0.05; vegetable oil 2.4; salt 1.6.
EFFECT: invention allows to manufacture a product with increased biological value, improved organoleptic characteristics and structural-and-mechanical properties.
