SUBSTANCE: invention can be used in production of a functional fish and vegetable product. The following is proposed: a fish and vegetable product in the form of sausages, which is made from fish, Poltava wheat grain No. 3, CO2-extract of black pepper and spicy-smoke hydrophobic CO2-extract, salt, beets and corn flour, with the following ratio of initial components, wt.%: 45.0 of fish; 25.6 of beets; 15.4 of wheat groats Poltavskaya No. 3; 12.58 of corn flour; 1.4 of salt; 0.01 of spicy-smoking hydrophobic CO2 extract; 0.01 of CO2 — black pepper extract.
EFFECT: invention is aimed at improving organoleptic characteristics and increasing the biological value of the product.
