FIELD: foodstuffs.
SUBSTANCE: invention relates to methods for the study of food products, in particular to a method for determining the fat content in cheese. The method involves diluting with water a sample of milk from which it will be obtained, homogenizing, irradiating with laser radiation with linear polarization, in which the electric vector is directed perpendicular to the horizontal plane and with a wavelength in the range from 0.44 mcm to 1.15 mcm, registering the intensity of laser radiation scattered back by the components of the milk laser radiation and the light flux passed through the dish, while the mass fraction of fat in cheese in terms of dry matter is calculated through the registered signals.
EFFECT: method allows increasing accuracy of determining the fat content.
