SUBSTANCE: method for producing a long coffee extract from a capsule in a coffee machine, comprising: providing a capsule containing a predetermined dose of roast and ground coffee, and a machine supplying hot water into the capsule; extracting a liquid coffee extract from the capsule by rotating the capsule around its central axis in a centrifugation machine and extracting the liquid coffee extract to the periphery of the capsule, while the machine continues supplying hot water; collecting the liquid coffee extract from the capsule and delivering the coffee extract into a receptacle, where the liquid coffee extract is formed with a coffee foam (namely, crema), which in a reference receptacle demonstrates an initial height of more than 15 mm in the receptacle, while such coffee foam is stable, retaining more than 50 % of its initial height for 180 seconds after extraction, and where the roast and ground coffee has a weight of 11 to 14 grams, a mean particle size D4.3 is from 200 to 500 mcm and a roasting degree is from 50 to 80 according to the Neuhaus color test (CTN).

EFFECT: purpose of the present invention is to propose a method for providing from a single-use capsule, processed in a coffee machine, a long coffee extract with 'crema' that presents a shiny visual appearance as well as a thick, homogeneous and uniform (unctuous) texture.
