The device comprises a vessel (1) for placing coffee beans, a heating device (12) for heating the coffee beans contained in the vessel, a control system (180) configured to control the heating device and configured to apply a roasting recipe (R) that provides temperatures T_at-t1, T_at-t2, etc. applied at separate consecutive times t₁, t₂, etc., respectively, for a given number m of coffee beans loaded inside the vessel. The control system is configured to determine at least the number m of coffee beans loaded inside the vessel, and with the possibility of accessing at least one series of roast recipes (R_i, R_i+1, etc.) adapted for roasting various successive predetermined amounts (M_i, M_i+1, etc.) of beans of the same type, and to the specified predetermined amounts M_i, M_i+1, etc. The control system is configured to determine the roasting recipe (R) applied to said specific number m of coffee beans loaded inside the vessel.
