FIELD: technological processes.
SUBSTANCE: invention relates to encapsulation of an active substance. Method for producing nanocapsules of red cabbage anthocyans in sodium alginate is carried out by adding to an alcohol solution containing anthocyans of red cabbage, suspension of sodium alginate in cyclohexane in the presence of preparation E472c, which is a glycerol ester with one or two molecules of edible fatty acids and one or two molecules of citric acid as a surfactant, with a mixing rate of 700 rpm. Then butyl chloride is added to deposit nanocapsules. Obtained nano capsules suspension is filtered and dried at room temperature. Weight ratio of core / shell in obtained nanocapsules is 1:3, 1:2 or 1:1.
EFFECT: disclosed method for producing nanocapsules of red cabbage anthocyans simplifies the technology of producing nanocapsules, accelerates the deposition process of the obtained nanocapsules and increases output of nanocapsules by weight.
