FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Chewing gum composition contains a rubber base, a bulk sweetener, and approximately 2 to 15 % by weight of fat in terms of the total weight of the chewing gum composition. Fat in chewing gum composition contains i) fat in polymorphous form of beta-prim and/or fat in polymorphous form of beta and ii) fat in polymorphous form of alpha with such ratio of fat in polymorphous form of beta-prim and/or fat in polymorphous form of beta to fat in polymorphous form of alpha. Fat is preferably fat in polymorphous form of beta-prim and/or fats in polymorphous form of beta. Fat contains approximately 55 to 100 % of fat in polymorphous form of beta-prim and/or fat in polymorphous form of beta. Also disclosed are two embodiments of the chewing gum composition production method.
EFFECT: invention is aimed at production of chewing gum with optimum technological and organoleptic characteristics.
