FIELD: confectionery.
SUBSTANCE: proposed method for producing confectionery includes mixing multiple ingredients including a rubber base, a bulk sweetener and fat, forming a confectionery mass at a mixing station, shaping the confectionery mass into a continuous confectionery sheet of a uniform thickness using a shaping station, and holding the confectionery mass or confectionery sheet at a temperature ranging from 25 to 75°C and at a relative humidity less than 80% for 5 min up to 6 h. The confectionery mass or confectionery sheet is then cooled after holding to produce a confectionery product. The confectionery product therein constitutes chewing gum. The chewing gum comprises fat with 55 to 100% beta-prime and/or beta polymorphs, and the remaining part is alpha polymorph.
EFFECT: invention is aimed at producing a composition of chewing gum of the required hardness necessary for packaging, coating or processing, maintaining the desired organoleptic characteristics.
