FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Method for production of defatted condensed milk with sugar envisages preparation of an aqueous extract of dried fermented leaves of the French willow by grinding dry leaves of the French willow, pouring them with drinking water at temperature of 60 °C and holding at this temperature for 20 minutes while periodically stirring. Then the extract is filtered, cooled to temperature of 40–50 °C and supplied for recovery of dry defatted milk. Sugar is added; the mixture is filtered, pasteurized, cooled and seeded. Crystallisation and post-cooling of the end product. Components are used in the claimed amounts.
EFFECT: invention makes it possible to increase the nutritional value of the product.
