SUBSTANCE: invention refers to food industry and public catering. Disclosed is a method for preparation donuts of sweet potatoes, in which sweet potatoes are cooked, peeled and strained in a hot form, 2 quail eggs, vegetable oil, salt, dry yeast are added into the batter, gradually adding wheat flour, yacon flour, all thoroughly mixed until homogeneous mass, ready-kneaded dough for donuts is left for 45 minutes, after 45 minutes small dough pieces are rolled into 1-1.5 cm-thick layer, donuts are doused with the help of a special donuts mold, the workpieces are put on a baking tray, covered with parchment paper, and allowed to stand for another 15 minutes, donuts are baked in an oven heated to 200°C, for 20-25 minutes, ready donuts are removed from the pan, allowed to cool a bit, then donuts are dipped with convex part into chocolate glaze of fructose chocolate, shaken off and held for 5-10 minutes to glaze hardening, wherein one prepares in following ratio of initial components, pts. wt.: wheat flour 150; yacon flour 50; batate 250; dry yeast 9; salt 9; chocolate fructose 200.

EFFECT: invention enables to obtain an end product having high consumer properties, the component composition of which includes functional ingredients containing food fibers, as well as expand the range of products.
