FIELD: food industry.

SUBSTANCE: method for preparation of pizza with application of sweet potato and yacon tubers is characterized by preparation of dough, sweet potato and yacon tubers are peeled, boiled until readiness, mashed to a puree state. One adds quail eggs, wheat flour and yacon to the produced puree, mixes, dusts the working surface with flour and kneads. On parchment paper, the dough is shaped to a circle, forming sides, the obtained base is transferred to a baking sheet. For filling preparation preliminarily boiled chicken fillet is cut into cubes, Ossetian and mozzarella cheeses are grated and mixed. Pizza base is greased with ketchup, chicken is laid out and sprinkled with part of grated cheese, kumquat, tomato and mushrooms cut into slices are laid on top of the cheese, all over with the remaining cheese and chia seeds and baked in oven at 180 °C for 30–40 minutes. Initial components are used at a certain ratio.
