FIELD: food industry.
SUBSTANCE: invention relates to production of flour confectionary products. Method for preparation of sweet corn-yam soft waffles involves washing of sweet potato tubers. Then they are cleaned, boiled, mashed to a puree state. One adds sweet potato puree, kefir and sugar to the separated quail egg yolks and stirs the mixture at low rpm. Melted butter is added and, while stirring, one adds sifted corn flour, yacon flour, baking powder and soda. Proteins whipped to soft peaks are added to dough in 2-3 approaches. Dough is placed in a heated and oiled waffle iron and baked during 5 minutes. Initial components are taken at the following ratio: sweet potato tubers – 150 g; corn flour – 200 g; yacon flour – 20 g; quail eggs – 3 pcs; baking powder – 3 g; butter – 35 g; kefir – 150 ml; sugar – 10 g; soda – 3 g. Output is 6 pcs.
EFFECT: invention makes it possible to expand the range of manufactured products, to obtain a product containing a functional ingredient, which enables to diversify the menu of diabetic patients with a healthy diet.
