FIELD: food industry.
SUBSTANCE: invention relates to food industry and catering. Method for preparation of a culinary product in the form of sticks envisages washing of sweet potato tubers. Then they are cleaned, boiled, mashed to a puree state. Milk 2.5% is poured into another container, butter and Adyghe salt are added, the mixture is brought to a boil over medium heat and, without removing from the heat, corn flour and cooked sweet potato puree are added. Stirring is performed during 2-3 minutes, then removed from heat, allowed to cool down a bit, 2 quail eggs are added and stirred till homogeneous mass. Also, 2 quail eggs are beaten separately, gradually adding to the dough so that it becomes like a thick cream; the produced dough is placed into a pastry bag and sticks 10 cm long are squeezed onto a baking sheet. Formed sticks are coated with one quail egg, sprinkled with chia seeds and baked at temperature of 200 degrees for 30 minutes until golden brown. Initial components are taken at the following ratio: corn flour – 75 g; sweet potato – 40 g; milk 2.5% – 120 ml; Adyghe salt – 2 g; butter – 35 g; quail eggs – 5 pcs; chia seeds – 1 g. Output is 10 pcs by 20 g.
EFFECT: invention makes it possible to expand the range of products and to obtain a product containing a functional ingredient, which enables to diversify the menu of diabetic patients with a healthy diet.
