SUBSTANCE: invention relates to the dairy industry and can be used in animal husbandry. The method of obtaining dry colostrum involves the use of fresh or frozen colostrum with acidity 40-55T, density 1.060-1.045 g / cm3. In fresh colostrum or colostrum after defrosting, add the supernatant fraction of colostrum after precipitation of casein. Then, the prepared fraction of antioxidants and antioxidants is introduced into the combined colostrum, for which ascorbic acid is dissolved in a 20-fold mass of distilled water at room temperature, quercetin is dissolved in a 10-fold mass of rectified ethyl alcohol with a temperature of at least 60C. The mass is mixed in a mixing machine for 3-5 minutes, then the colostrum is poured onto a stainless steel drying pan at the rate of 8-10 kg per m2 of the surface of the tray and the height of the liquid level not exceeding 15 mm. Thermal sensors are installed to control the temperature during freezing and drying, on the surface of the product, in the middle of the layer and in the place of its contact with the baking sheet. At the same time, for freezing, baking sheets with colostrum are placed in a freezer and frozen at a temperature of minus 18-20C to a temperature of 14-15C in the middle of the product layer. For freeze-drying, thermocouples are connected to measuring instruments, the initial temperature of the heating plates when loading the product into the sublimator is set not higher than 25-30C. During the period of sublimation, the colostrum temperature in the middle of the layer is kept at a value of minus 10-15C, gradually increasing to 0C, and the colostrum drying process ends when the temperature in the central zone of the product reaches 38-40C.

EFFECT: invention improves colostral immunity of newborn calves due to the high content of immunoglobulins in the product.
