SUBSTANCE: method involves immersing fish raw materials in decontaminating solutions. The raw material is immersed in a 0.1% solution of ascorbic acid and kept for 10 minutes at room temperature. Next, the raw material is immersed in a 0.01% solution of apple pectin and kept for 10 minutes at room temperature. Then the raw material is immersed in a 2% solution of the Resinase A2X lipase enzyme, kept for 10 minutes in a thermostat at 37°C and washed with deionized water.

EFFECT: invention ensures the extraction of harmful impurities while maintaining the presentation of the product.
