FIELD: food industry; public catering.
SUBSTANCE: method for the production of functional fish cutlets with the addition of a food additive from germinated bean seeds of the Pobeditel variety allows for high biological value due to the presence of essential components, including protein and minerals. A method for the production of functional fish cutlets is proposed, which involves the preparation of fish raw materials from pike perch, grinding the resulting fish meat and the crumb of stale wheat bread soaked in milk with a meat grinder with a pate grate, then introducing a food additive obtained from sprouted bean seeds of the Pobeditel variety, which is a protein concentrate beans in powder form, adding salt, garlic, dried dill, ground black pepper, sugar, preparing minced meat by mixing until smooth, forming cutlets, breading in breadcrumbs, packaging and freezing, while the ratio of the following initial components is, g: pike perch 60; food supplement from germinated bean seeds of the Pobeditel variety 20; wheat bread 24; milk 32; crackers 12.
EFFECT: invention makes it possible to produce functional fish cutlets with the addition of a food additive from sprouted bean seeds of the Pobeditel variety and provides an improvement in the physiological indicators of the quality of the finished product, high biological value and an increase in the yield of finished products.
