FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the preparation of meat, flour, dairy and fish products in order to enrich their composition and improve human health. The method for obtaining a nutritional supplement from sprouted corn of the “Ossetian white dent corn” variety includes grinding sprouted corn, sieving through a sieve (hole diameter 1 mcm), cleaning from ballast substances (Amylosubtilin G 10x at a dosage of 2.5 units per 1 g of starch) at a flour-water ratio of 1:4 and a temperature of 45°C, centrifugation for 10-20 min 2000-3000 s-1, precipitation of protein with 40% acetic acid at pH 4.2, secondary centrifugation 10-12 min 2000-3000 s-1, washing the protein with water (pH 5.7-6.7), final centrifugation 10-12 min 2000-3000 s-1, drying the paste.
EFFECT: invention makes it possible to obtain nutritional supplements with a high content of fat-soluble vitamins and dietary fiber.
