FIELD: food industry.

SUBSTANCE: invention relates to food industry and can be used in production of functional flour, meat and dairy products of preventive action. Method for producing a biologically active additive from germinated wheat seeds is characterized by that wheat seeds are treated with 0.5% potassium permanganate solution, then they are soaked at temperature of 18°C, duration of 16 hours, water hardness 5 mg eq/l and hydromodule 1:2. Wheat seeds moisture content is 45%. Swollen wheat seeds are germinated at temperature of 19°C 86 hours and the germination process is completed when the seeds moisture content is 35%, the wheat sprout length is 11–13 mm, the sprout diameter is 1.0–1.1 mm, the content of extractive substances is 29.9 mg/100 g. Then the germinated wheat seed biologically active additive is dried at 45 °C under natural convection conditions to moisture content of 10–12%. Then it is crushed to particle size of 100–200 mcm and stored at temperature of 15–20°C and humidity 70–75% up to 6 months.

EFFECT: invention enables to obtain a product with increased biological value.
