FIELD: food industry.
SUBSTANCE: group of inventions relates to methods and compositions for improving the quality of meat obtained from an animal, to feeding an animal, as well as to enhancing the redness of the meat color. A method includes feeding a pig with a nitrate compound in the amount effective for enhancing the redness of the color of meat obtained from the pig. The nitrate compound is inorganic nitrate salt, the pig is in a phase after weaning, in a growth phase or in a final fattening phase, the amount of nitrate fed to the pig is at least from 0.06% by wt. to 0.5% by wt. of a daily ration, and after approximately 24 hours after the slaughter, a value a*, which is at least from 9.3 to 10.0 at CIE L*a*b* measurement of the color of meat obtained from the pig, is greater than a value a* for meat obtained from the pig of negative control that received a feed ration that did not contain the nitrate compound.
EFFECT: improving the meat quality.
