FIELD: food industry.
SUBSTANCE: invention relates to the food industry. The method for the separate determination of organic and inorganic arsenic in seafood consists in the selection of samples, their processing to obtain a homogenized wet or dry sample, which are placed in test tubes, extraction of each sample with a solution of 3% by weight of hydrogen peroxide in 0.055 M hydrochloric acid on deionized water, on water bath with a shaker at a temperature of 95°C for 45 minutes, then cooling to room temperature, centrifuging for 10 minutes at 4000 rpm, then transferring the supernatants into polypropylene tubes with deionized water to bring to a volume of 10 cm3, determining the total arsenic content in 5 cm3 of the selected supernatant sample, separating arsenic into organic and inorganic fractions in 3 cm3 of the remaining amount of the selected sample, and additionally during the extraction, the sample is subjected to manual shaking the tube every 10 minutes, and the determination of the amount of total arsenic, organic and inorganic arsenic is carried out on a quadrupole mass spectrometer with inductively coupled plasma ICP-MS automatically.
EFFECT: invention makes it possible to achieve a high degree of reproducibility, stability and accuracy of the results obtained (0.5 mcg/dm3).
