FIELD: chemistry.
SUBSTANCE: invention relates to food industry, in particular to quantitative determination of the content of yessotoxins in molluscs, maximum permissible level of Occasional toxoid content in molluscs - no more than 3.75 mg/kg. That is ensured by quantitative determination of yessotoxins by HPLC-MS using a system based on liquid chromatograph Agilent 1200 HPLC System and high-resolution mass spectrometer Thermo Scientific Orbitrap Elite. For analysis, product samples are homogenised, extracted with methyl alcohol and chromatographed on an Agilent ZORBAX SB-C18 column in gradient mode using component A (0.1 % formic acid in water) and B (1-propanol) and mass-spectrometric detection of yessotoxins with ionisation ionization in negative ion mode [M-H]- (test ion [MNa-2H]-). Lower limit of quantitative determination of yessotoxins when using the proposed method is 0.53 mg/kg with measurement error of not more than 15 %.
EFFECT: invention ensures food products safety evaluation and can be used during sea food safety expertise and state supervision.
