SUBSTANCE: invention relates to the processing industry. The method for obtaining high-molecular collagen includes contouring the skins of pond fish, cleansing the middle part from cuts of muscle tissue, fat and mechanical impurities, grinding into strips of 2-4 cm, rinsing with water at a temperature of 8-14°C for 10-15 minutes, soaking in a solution of sodium chloride with a concentration of 3 wt. %, for 10 minutes, degreasing in a solution of the enzyme complex of liporizine containing 1 part of protease and 2 parts of lipase, with a concentration of 0.1% by weight of the raw materials of the enzyme complex for 30 minutes, washing in distilled water until there are no residues of the enzyme complex, soaking in a peroxide-alkaline solution consisting of a mixture of hydrogen peroxide with a concentration of 3 wt. %, and sodium hydroxide with a concentration of 2 wt. %, taken in a ratio of 6:4 – 7:3, holding for 2-3 hours at a temperature of 20-25°C, washing in distilled water at a temperature of 14-18°C for 20 minutes, pouring with a solution of acetic acid with a concentration of 1.5% and holding for 5 days, neutralization with a solution of sodium hydroxide to pH 5.5, homogenization, packaging in polyethylene containers and storage at a temperature of 0 ... + 4 to 4 months.
