FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for the production of pies with an open filling, characterized in that it includes the preparation of yeast dough from 100 kg of wheat flour of the highest grade, 7.5 kg of drinking milk, 6.0 kg of chicken eggs, 5.0 kg of sunflower oil, 4.5 kg white sugar, 1.0 kg of table salt, 1.0 kg of pressed bakery yeast, 0.5 kg of baking soda and filling of 93.5 kg of sour cream, 16.5 kg of pumpkin puree, 20.0 kg of sugar, 15.0 kg of chicken eggs, shaping the dough mass into pieces, filling the dough pieces with filling, baking, cooling, marking and packaging the finished product.
EFFECT: invention allows to increase the shelf life of the finished product, as well as to expand the range of culinary products with an open filling.
