FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to bakery, and can be used for production of bakery products. Method for preparation of Ossetian pie with filling involves preparation of dough and preparation of filling of soft Ossetian cheese, dill, cilantro, green onions – leaves, cream of 35% fat cow milk and food culinary salt with introduction of a vegetable origin additive into the filling. Vegetal origin additive is represented by asparagus in the form of young spear-like shoots 18-20 cm long. At that initial components for one portion of pie of round shape with diameter of 30 cm and thickness of 2-3 cm are taken in the following ratio in grams: dough – 450; ingredients for filling preparation: asparagus – 398; Ossetian soft cheese – 186; dill – 11; cilantro – 11; green onions – leaves – 24; 35 % fat cow milk cream – 50; culinary food salt – 5; melted butter for ready pies greasing – 30.
EFFECT: invention ensures expansion of the range of flour products and production of a new product with high biological value and pronounced increased taste indices of asparagus.
